Cake:
•4 Eggs
•1 ¼ cups of vegetable oil
•2 cups granulated sugar
•2 teaspoons vanilla extract
•2 cups flour
•2 teaspoons baking soda
•2 teaspoons baking powder
•½ teaspoon salt
•2 teaspoons ground cinnamon
•3 cups grated carrots

Frosting:
•½ cup (1 stick) butter, room temperature
•8 ounces cream cheese, room temperature
•4 cups powdered sugar
•1 teaspoon vanilla extract or 1 tablespoon maple syrup

Make Cake: Preheat oven to 350 degrees. Grease and flour a 13”x 9” pan.

In a large bowl, beat eggs, oil, granulated sugar and vanilla. In a separate bowl, whisk together flour, baking soda, baking powder, salt and cinnamon. Add to egg mixture and stir in. Stir in carrot. Pour batter into prepared pan.

Bake in preheated oven 40-50 minute, or until a toothpick inserted into the center of cake comes out clean. Let cool in pan 10 minutes, then turn out onto wire rack and cool completely.

Make Frosting: In a medium bowl, combine butter, cream cheese, powdered sugar and vanilla or maple syrup. Beat until mixture is smooth and creamy. Spread onto cooled cake.
