Black bean salsa:
1-15 ounce can black beans (drained, rinsed)
10 ounces roasted corn
4 ounces finely diced red onion
1 fresh lime
½ teaspoon cumin
¼ cup finely diced green pepper
¼ cup finely diced red pepper

Salad:
6 ounce grilled chicken breast with Cajun seasoning
5 ounces lettuce mix
6 ounces shredded cheddar cheese
4 ounces diced tomatoes
4 ounces black bean salsa (recipe above)
4 ounces salsa ranch dressing (equal amounts of ranch and salsa mixed)
Serve with 2 warm flour tortillas
